Marry Me Chicken Lasagne
Creamy sun-dried tomato chicken lasagne with spinach, parmesan, and a simple homemade white sauce, layered with pasta sheets and mozzarella and baked until golden.

2 TbspSun-Dried Tomato Oil
3garlic cloves
minced
600gchicken breast
diced
1 Tbsptomato paste
1 tsppaprika
1 tspitalian herbs
Chilli flakes
salt
pepper
150gsun-dried tomatoes
chopped
200mlchicken stock
200mlsingle cream
60gparmesan
2 handfulsspinach
50gbutter
White sauce
50gflour
600mlmilk
White sauce

To layer
150gmozzarella
To layer
parmesan
Instructions
Step 1
Heat tomato oil, add garlic (30 secs). Stir in tomato paste (1 min).
Step 2
Add chicken, spices, salt & pepper. Seal.
Step 3
Add sun-dried tomatoes, stock & cream. Simmer 5–10 mins.
Step 4
Stir in parmesan, fold through spinach.
Step 5
Make white sauce: melt butter, stir in flour, whisk in milk until thick.
Step 6
Layer white sauce → sheets → chicken → mozzarella. Repeat.
Step 7
Bake 180°C (160 fan) covered 30 mins, uncover 15–20 mins until golden.
