Dairy Free Creamy Mint Sauce

Mint has a reputation for growing like a weed, so let's put some of Vic's to good use. Here's a recipe for dairy free creamy mint sauce. It has a base of soaked cashews and chickpeas to make it creamy while still keeping it lactose free. This Mediterranean-ish, hummus-like dip is a perfect alternative to Tzatziki, and pairs well with grilled meats, roasted veggies, or falafel. Or try it as a salad dressing or dip for your raw carrots. Each serving is about 2 tbsp (30 g).
