In a small saucepan, combine soy sauce, honey, ½ cup water, and garlic powder.

Bring to a boil. While the sauce is simmering, combine the last ¼ cup of water and cornstarch in a small bowl. Whisk well and gradually add to the simmering sauce, stirring constantly.

Reduce heat and continue stirring until sauce thickens. Remove from heat and set aside.

Preheat the oven to 200 ˚C.

Heat the oil in a large frying pan over medium heat. Once hot, add the diced chicken and fry until golden brown. Add the finely chopped onion and then sauté until the onion is soft, about 5 minutes.

Add the cooked rice and remaining ingredients.

Pour the sauce over the meat and stir until all the ingredients are coated. Then transfer to the prepared baking dish.
Step 10
Bake for 30 minutes or until the chicken is cooked through and the vegetables are tender but not mushy. Serve immediately.
