Instructions

Step 1
Prepare Noodles: Cook the egg noodles in boiling water according to the packet instructions (usually 4 minutes). Drain, rinse with cold water to stop cooking, and toss with a drop of oil so they do not stick.Stir-Fry Aromatics: Heat oil in a wok or large pan over high heat. Sauté the shallots and garlic for 1 minute.Sear Chicken & Veg: Add the sliced chicken and cook for 3 minutes. Toss in the sliced red pepper and stir-fry for an additional 2 minutes until the chicken is fully cooked.Incorporate Egg: Push ingredients to the side, pour the beaten egg into the pan, swirl it around to cook, then shred it into the mixture.Toss Noodles: Add the cooked noodles to the wok.Sauce and Caramelize: Pour in the Kecap Manis and standard soy sauce. Toss everything constantly for 2–3 minutes over high heat so the noodles absorb the sweet, smoky flavor. Serve with fresh lime wedges squeezed on top.
