For the dressing
Instructions
Step 1
Boil the potatoes for 10–15 minutes until tender, then peel them and cut them into chunks.
Step 2
Boil the beans for about 5 minutes or until soft but still slightly firm, then drain and let them cool.
Step 3
Combine the potatoes, beans, chopped parsley, and tuna in a bowl. Mix gently and let the salad rest in the fridge for about 30 minutes.
Step 4
Prepare the dressing by adding mustard, olive oil, lemon juice, salt, and black pepper to a jar. Close the jar and shake well until emulsified.
Step 5
Pour the dressing over the salad just before serving and mix gently.
