1 ⅓ cupwhole wheat flour

½ tspground cinnamon

Instructions
Step 1

In a medium bowl, beat the softened butter and unsweetened applesauce together until uniform. Whisk in the whole egg and vanilla extract until the mixture is completely smooth and creamy.
Step 2

In a separate bowl, whisk together the oat flour, whole wheat flour, baking powder, cinnamon, and salt. Pour the dry mix into the wet ingredients. Stir until a solid dough forms, then use your hands to gently knead it a few times into a cohesive ball.
Step 3

Flatten the dough into a disc and wrap it in plastic. Chill in the fridge for 20 minutes. Because whole wheat handles beautifully, you don't need a long chill—just enough to let the flours hydrate and firm up the butter.
Step 4

Preheat your oven to 350°F (180°C). Lightly dust your counter with a pinch of whole wheat flour (or roll between parchment paper). Roll the dough out to a uniform 1/8 inch thickness. Stamp out your animal shapes.
Step 5

Transfer the shapes to a parchment-lined baking sheet. Bake for 14 minutes.
Step 6
Flip and lower temperature to 250°F and bake for another 14 minutes. Remove and let cool completely. If still chewy in the center, flip and bake for another 10 minutes at 250°F
