Mediterranean-style Chicken
Tasty chicken with roasted potatoes, charred capsicum and onion, lettuce, and a creamy garlic-herb yogurt sauce.

Chicken Skewers
600gchicken breast
cut into large cubes
1 Tbspolive oil
1 tspsmoked paprika
1 tspgarlic powder
1 tspdried oregano
½ tspground cumin
½ tspsalt
¼ tspblack pepper
1 Tbsplemon juice

Instructions
Step 1
1. Roast the Potatoes
Step 2
1. Preheat oven to 220°C (200°C fan-forced).
Step 3
2. Toss potatoes with olive oil, garlic powder, oregano, salt and pepper.
Step 4
3. Spread on a baking tray and roast for 35–40 minutes, turning halfway, until golden and crispy.

2. Marinate the Chicken

1. Combine olive oil, paprika, garlic powder, oregano, cumin, salt, pepper and lemon juice.

2. Coat chicken thoroughly and let marinate for 20–30 minutes (or up to overnight).

3. Make the Sauce

1. Mix yoghurt, garlic, lemon juice, parsley, salt and pepper.

2. Refrigerate until serving.

4. Assemble Skewers

1. Thread chicken onto skewers, alternating with capsicum and red onion pieces.

2. Lightly brush vegetables with olive oil.

5. Cook the Skewers

BBQ or Grill Pan:

* Cook over medium-high heat for 10–12 minutes, turning regularly until lightly charred and cooked through.

Air Fryer:

* Cook at 200°C for 10–12 minutes, turning once.

6. Build the Bowls

1. Add lettuce to each bowl.

2. Top with roasted potatoes.
Step 22
3. Add the chicken skewers.

4. Spoon over a generous dollop of garlic-herb yoghurt.

5. Sprinkle with parsley and serve with lemon wedges.
Step 25
For extra flavour, add a teaspoon of sumac or a drizzle of hot honey over the chicken before serving.
