Ingredients

1tin chopped tomatoes
or cherry tomatoes
1tin sweetcorn
1tin kidney beans
drained and rinsed
1bell pepper
diced
1red onion
diced
4garlic cloves
chopped
450mlwater
1vegetable stock cubes
1 tspground cumin
1 TSPpaprika
sweet, smoked or spicy depending on preference
1 tspdried oregano
0.5 TSPcayenne pepper
or more to taste
1 tspgarlic powder
Worcestershire sauce
OR tomato purée
salt
to taste
pepper
to taste
150gcream cheese
1lime juiced
To serve
Instructions
Step 1
Heat 1 tbsp olive oil in your pot. Add the onion and pepper. Cook for 5-8 minutes until the onion softens and the pepper starts to collapse a little.
Step 2
Add the garlic and cook for another 30 seconds. Stir in the tomato purée or Worcestershire sauce and spices for 1 minute.
Step 3
Add beans, sweetcorn, tomatoes and vegetable stock cube dissolved in water and stir.
Step 4
Simmer for 30 minutes covered.
Step 5
Remove from heat, allow to cool for a few minutes. Then add lime juice and cream cheese. Stir thoroughly until the cream cheese melts and combines into the soup.
Step 6
Garnish with toppings of choice, such as tortilla chips, cheese, coriander, avocado etc. Enjoy!
