Cowboy caviar/ dense Bean Salad
Dense Bean Salad
Ingredients:
⁃ 1 can kidney beans, drained and rinsed
⁃ 1 can cannellini beans, drained and rinsed
⁃ 1 can black beans, drained and rinsed
⁃ 1 can pinto beans, drained and rinsed
⁃ 1 can garbanzo beans, drained and rinsed
⁃ 1 can corn, drained
⁃ 1 cup cooked red & white quinoa
⁃ 1 cucumber, diced
⁃ 5-6 mini sweet peppers, chopped
⁃ 1-2 jalapeños, finely diced
⁃ 1/2 red onion, diced
Dressing:
⁃ 1/3 cup olive oil
⁃ Juice of 4 limes
⁃ 1-2 tbsp honey
⁃ Salt, to taste
⁃ Pepper, to taste
⁃ Garlic powder
⁃ Onion powder
⁃ Cumin
⁃ Chili powder
⁃ Paprika
Directions:
1. Drain and rinse all beans and corn really well.
2. Cook quinoa if needed and let it cool.
3. Chop all veggies and add everything into a large bowl.
4. In a separate bowl or jar, whisk together olive oil, lime juice, honey, and all seasonings.
5. Pour dressing over the salad and mix until everything is fully coated.
6. Taste and adjust salt, lime, or honey as needed.
7. Let it chill in the fridge for at least 30 minutes before serving so all the flavors soak in.
⁃ Perfect for meal prep, high protein lunches, BBQs, or eating with chips.
