Instructions
Step 1
Slice the zucchini into thin rounds and grill them in a lightly oiled pan until soft and lightly browned. Season with a pinch of salt and set aside.
Step 2
Slice the mushrooms and cook them in a pan with olive oil and garlic until they start to soften. Add the white wine and let it evaporate, then season with salt, black pepper, and parsley. Remove the garlic and set the mushrooms aside.
Step 3
Warm a pan on low heat and place the piadina in it. Spread the mayonnaise evenly, then add the goat cheese, salad leaves, grilled zucchini, and cooked mushrooms.
Step 4
Add the cured ham, fold the piadina in half, and cook briefly until warm and lightly crisp. Serve immediately.
