Instructions

Step 1
Roughly chop tomatoes, onions, chili and bell pepper.

2. Heat olive oil in a large pot.

3. Sauté onions, garlic and chili for 3–5 minutes until fragrant.

4. Add tomatoes and bell pepper.
Step 5
5. Simmer gently for approximately 3 hours, stirring occasionally.
Step 6
6. Add water as needed during cooking.
Step 7
7. Blend the soup until completely smooth using an immersion blender.
Step 8
8. Season with salt and black pepper to taste.
Step 9
9. Serve plain or with a spoon of Greek yogurt.
