Budget friendly and delicious, this creamy potassium and calcium-rich tomato and greens soup is so simple to make using fresh ingredients, yet so decadent tasting you won’t believe how healthy it is. Starting with fresh tomatoes and cooking them down releases their sweet flavors, which is complemented by the hearty, rich flavors of spinach. Serve this with a healthy homemade grilled cheese sandwich for a cozy, comforting meal.

Instructions
Step 1
In a large soup pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, 5-7 minutes.
Step 2
Add the garlic and cook for 1 minute. Add the tomatoes, tomato paste, basil, thyme, broth, and black pepper and stir well. Bring the soup to a boil, then reduce the heat and simmer, uncovered, until the tomatoes are very tender, about 30 minutes.
Step 3
Using an immersion blender, puree the soup until smooth (or transfer in batches to a blender and puree until smooth, returning to the soup pot).
Step 4
Add the spinach and stir and cook for 4-5 minutes, until warmed through.
Step 5
Remove from the heat and allow to cool slightly before stirring in the yogurt (to avoid curdling). This soup has a fairly thick consistency, so if you like a thinner soup, simply add a bit more broth.
Step 6
Serve with a healthy homemade grilled cheese if desired (whole-grain bread and low-fat cheese).
