Chipotle Sausages (Salchichas en Chipotle)

Instructions

Step 1
Make the chipotle sauce (cooking time: 5 mins): Boil the tomatoes in water for about 5 minutes until the skins start to peel.
Step 2
Transfer the boiled tomatoes to a blender. Add the quarter piece of onion, garlic clove, chipotle peppers (with a spoonful of their adobo sauce), crema, and the half cup of water or broth.

Blend until completely smooth. Set aside.
Step 4
Sear the sausages (cooking time: 5–7 mins): Heat the oil or butter in a large skillet over medium heat.
Step 5
Add the sliced onion and sauté for about 2 minutes until translucent.
Step 6
Add the sliced sausages and cook for 3 to 5 minutes, stirring occasionally, until they get a nice golden brown color.
Step 7
Simmer and reduce (cooking time: 8–10 mins): Pour the blended chipotle sauce over the browned sausages.
Step 8
Stir well and bring the mixture to a gentle boil over medium heat (about 2 minutes).
Step 9
Once boiling, reduce the heat to low, season with salt and pepper to taste, and let it simmer for 6 to 8 minutes. This allows the sauce to thicken and the sausages to absorb the flavors.

Tip: Serve hot with warm tortillas, over white rice, or with tortilla chips.
