Step 1
1. In a pot, add water, 2 tbsp salt, 2 garlic cloves, and 1/4 of an onion.
Step 2
2. Once the water is boiling, add the chicken breast and boil for 20-25 minutes or until cooked through.

3. As chicken is boiling, remove the white film. When it is done reserve 1/2 C of the chicken broth.
Step 4
4. Roast the tomatoes, 3 garlic cloves, and 1/4 onion for 10-15 minutes or until the skin is blistered.

5. To a blender, add the chicken broth, onion, garlic, blistered tomatoes, and chiles en adobo (spicy).

6. Chop the remainder of the onion.

7. Shred chicken using your preferred method.

8. Add 1 tbsp of oil and sauté onions for 4-5 minutes or until they are translucent.
Step 9
9. Add in the sauce and mix. Once well combined, add the chicken. Simmer for 8 minutes. Add salt, pepper, and any other seasonings to taste.

10. Air fryer tostadas: Air fry tortillas at 390* F for 4 minutes, flip, and cook for an additional 4 minutes. (The tortilla will fly if you don’t put it under the tray or weigh it down with an air fryer safe dish)

11. 1 SERVING: 3 tostadas. On each add 1.5 oz of tinga, 20 g nonfat Greek yogurt, 1/4 c lettuce, & divide 28 G of queso fresco between the 3.
