Instructions

Wash your stems
Step 2
Bring a large pan of salted water to boil and blanch your stems for 6-7 minutes until tender and bright green

Add 1tbsp olive oil, 1tbsp butter and a minced garlic clove to a pan on medium high for 1-2 minutes
Step 4
Add your dandelion stems and toss to coat
Step 5
Add to a bowl and stir in pesto, salt and pepper.
Step 6
Add in sun-dried tomatoes and mozzarella pearls
