Instructions
Step 1
Sauté the diced onion in a large pot until translucent.
Step 2
Stir in the chipotle paste, ground cumin, and smoked paprika, cooking for 1 minute until fragrant.
Step 3
Add all three types of beans, the sweetcorn, chopped tomatoes, and vegetable stock.
Step 4
Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until thick.
Step 5
Divide into portions, cool completely, and freeze.
