Instructions
Step 1
Add olive oil to pan and heat pan on medium-high.
Step 2
Add leeks, celery, and garlic. Cook for 3 minutes.
Step 3
Add mushrooms. Cook for 5 minutes.
Step 4
Add broth and bring to a boil. Reduce heat to low, cover and simmer for 10 minutes.
Step 5
Remove from heat and puree in saucepan using immersion blender (optional to desired thickness).
Step 6
Add milk to pan and simmer for 1 minute until heated through. Remove from heat and then add salt and pepper to taste.
