Mini Meat Loaves

Individual meatloaf portions baked in muffin cups and topped with a sweet-tangy ketchup, brown sugar, and mustard sauce. Great for quick dinners and easy reheating.

Instructions

Step 1
Mix together egg, bread crumbs, onion, horseradish, salt, pepper and beef.
Step 2
Place meatloaf mixture in muffin cups.
Step 3
Bake at 375°F for 18 to 20 minutes.
Step 4
Mix together ketchup, brown sugar and ground mustard for sauce.
Step 5
Add sauce to loaves and bake 10 minutes longer, or until temperature reaches 160°F.
Step 6
If frozen, thaw in refrigerator.
Step 7
Bake at 350°F for 30 minutes, or cover and microwave on high one minute.
