Meatloaf “cupcakes”

These juicy, delicious meatloaf cupcakes are a fun twist on a classic dinner and they cook up in half the time! Add some mashed potatoes for “icing” on top for extra fun!

Instructions

Step 1
Preheat oven to 375
Step 2
Lightly grease a muffin tin
Step 3
Mix all ingredients except the bbq sauce together and roll into 12 equal balls
Step 4
Press each down into a muffin and add 1 tbsp bbq sauce on top
Step 5
Bake 35 minutes at 375°
Step 6
For extra fun pipe on mashed potatoes for the “icing”
