Ingredients

3 slicesBacon
chopped into bite sized pieces
1onion
medium, diced
¾ cupcarrot
large
¾ cupcelery stalk

2cloves garlic
5 cupswater
divided
12 ouncesdried lentils
1chicken bullion cube
2 Tbspparsley
chopped
1 Tbspsalt
½ tsppepper
¼ tspdried thyme
1bay leaf
28 ouncesdiced tomatoes
frozen spinach

0.25 headcabbage
optional, chopped into bite sized pieces
1 packagepolish sausage

Instructions
Step 1
Heat dutch oven or large heavy pot over medium high heat.
Step 2
Chop bacon into bite sized pieces then fry until fat is rendered. Remove bacon and set aside, keeping the rendered bacon fat in the pot.
Step 3
Add onion, carrot, celery, and garlic to the pot and saute stirring occasionally until celery is softened, about 10 minutes.
Step 4
Add bacon, 4 cups water, lentils, bullion cube, parsley, salt, pepper, thyme, and bay leaf to the pot. Bring to a boil then reduce heat, cover, and simmer until soup thickens, about 1 hour.
Step 5
Add tomatoes and their liquid, 1 cup water, spinach or cabbage, and sausages to the pot. Simmer uncovered for about 15 minutes.
Step 6
Serve.
