Instructions
Step 1
Make the crispy beef tortilla: Mix 90g lean ground beef with taco seasoning. Place a ball of the mixture onto the mini tortilla and press it down flat. Cook in a sprayed pan, meat-side down, until crispy and seared. Flip or add the reduced-fat American cheese slice on top, cover with a lid briefly to melt the cheese. Set aside.

2. Scramble the eggs: In the same pan (or another), spray and scramble the egg portion on low heat until light and fluffy.

3. Make the sauce: Mix 10g low-sugar ketchup, 10g light mayo, and ~12g 0% Greek yogurt until smooth.

4. Assemble the wrap: On a warm protein tortilla, spread the sauce. Add the air-fried hash brown, scrambled eggs, chopped chives, 25g low-fat grated cheese, and the crispy beef tortilla. Fold in the sides to form a sealed wrap (like a crunch wrap).

5. Crisp it up: Toast the assembled wrap in a pan until crispy on the outside.
