Easy Chicken Tacos

Quick and delicious chicken tacos topped with pico de gallo and creamy cilantro sauce. These tasty tacos are perfect for weeknight dinners and are sure to please the entire family, not to mention you’ll have dinner on the table with in 20 minutes.

Instructions

Step 1
1. Cut the chicken into bite size pieces and place in a bowl. Add to the chicken the seasonings adobo, garlic powder, onion powder, chili powder, smoked paprika, cumin, chili flakes and salt. Add in cilantro and lime juice, mix and cook right away or let marinate for a 1/2 hour or more if you have time.

2. Place a nonstick skillet on medium-high heat. Toast the tortillas on both sides first (about 30 seconds per side until golden).

3. Next cook the chicken— add oil to the same skillet, add in the chicken and cook until fully cooked through (until it reaches an internal temp of 165 degrees).

4. Pico de gallo— in a bowl combine together the finely chopped tomatoes, jalapeños, red onion and cilantro. Add in the lime juice and season with salt, black pepper and mix well.
Step 5
5. Cilantro lime sauce— in a bowl mix together mayonnaise, sour cream, cilantro, lime juice and salt to taste.
Step 6
6. Assemble the tacos— by placing about 1/4 cup of cooked chicken into each tortilla. Top with a few tablespoons of the pico de gallo and a drizzle of cilantro sauce and enjoy.
