Goat’s cheese frittata

One of the simplest lunch recipes, and it feeds the entire family. Frittatas are so versatile, and this one includes a good mix of protein and vegetables without compromising on flavor.

Instructions

Step 1
Preheat the oven to 350 degrees. * Peel and dice the sweet potatoes into 2cm cubes. Peel and slice the red onion into wedges. Slice the red peppers and remove the cores. Transfer the prepared vegetables to a roasting tray, drizzle with olive oil, the balsamic vinegar and season with salt, pepper and paprika. Roast for 45 minutes until the potatoes have softened. 10 minutes from the end, add in the asparagus to the roasting tin. * Once all the vegetables are cooked, transfer to a medium sized deep roasting tin (around 9 x 13 in). Whisk the eggs together and season with salt and pepper. Pour the egg mix. over the vegetables and scatter the goat’s cheese over the top. Bake in the oven for 40-45 minutes until the egg has set. Test by giving the tray a good wobble, the egg should be firm and not runny.
