Instructions

Step 1
Toss diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
Step 2
Roast in a 400°F (200°C) oven for 20–25 minutes, or until golden and crispy.
Step 3
Season steak with salt and pepper.
Step 4
Heat a skillet over medium-high heat. Cook steak 3–4 minutes per side for medium-rare (or to your preference). Rest for 5 minutes, then slice.
Step 5
In the same skillet, add butter and scramble eggs until fluffy.
Step 6
Sauté spinach for 1–2 minutes until just wilted.
Step 7
Assemble bowls with roasted potatoes, spinach, steak, and eggs.
Step 8
Top with avocado, tomatoes, feta, parsley, and hot sauce if using. Enjoy!
