Instructions

Step 1
Preheat the oven to 400°F (200°C).

2 Place the cod fillets on a baking sheet lined with parchment paper.

3 Drizzle with olive oil and lemon juice, then sprinkle with no-salt seasoning and minced garlic.

4 Arrange the zucchini, red bell pepper, red onion, and cherry tomatoes around the cod.

5 Season the vegetables with black pepper and a bit more no-salt seasoning if desired.
