Add all the ingredients together and mix well until everything is evenly combined.

When you don’t have ground allspice, but you do have whole allspice berries, you can easily grind them yourself with a mortar and pestle. In fact, this is the best way to get the most out of their aroma, because the essential oils are released fresh on the spot. Follow these steps for the best result:

Preparation: If you like, briefly toast the allspice berries in a dry frying pan, without any oil, to bring out even more depth and aroma. Keep them moving and toast only until they become fragrant.
Step 4
Crack them first: Place the allspice berries in the mortar and put the pestle on top. Press down and twist to break the hard berries into smaller pieces.
Step 5
Grind them down: Use a circular motion with the pestle to grind the cracked pieces into a fine, fragrant powder.
Step 6
Tip: Allspice berries are quite hard, so turning them into a fine powder takes a bit of muscle. Need a larger batch? A clean coffee grinder or spice grinder is a smart shortcut.
