Air-fryer chicken nasi goreng with a sweet-salty, lightly spicy sauce. Toss with rice, chilli, shallot and garlic, then air-fry for a quick, satisfying dinner.

4chicken breasts
cut into really small chunks
1 Tbspdark soy sauce
1 Tbspfish sauce
2 Tbspsesame oil
3 Tbspsoy sauce
1 Tbsptomato purée
or sriracha
1 Tbspsoft brown sugar
1carrot
grated, optional
1red chilli
deseeded and finely chopped
1shallot
finely chopped
500gmicrowave rice
leftover cooked
4garlic cloves
crushed
eggs
To serve, fried

Instructions
Step 1
Coat the chicken in the dark soy sauce and fish sauce. Remove the trays from the air fryer and air-fry the chicken at 200°C for 8 minutes.
Step 2
In a small bowl, mix the sesame oil, kecap manis or soy sauce, tomato purée or sriracha and brown sugar.
Step 3
In a large bowl, mix all the other ingredients with the sauce and add to the chicken in the air fryer, mix, then air-fry at 200°C for 8–10 minutes.
Step 4
Serve with fried eggs and any of your preferred side bits.
