Step 1
Preheat your oven to 275°F. Cut your 3-pound pork loin into 4 large, even chunks so it cooks through more quickly and soaks up more moisture.
Season: Pat the pieces completely dry with a paper towel. Coat all sides generously with your preferred dry rub (e.g., a mix of smoked paprika, garlic powder, onion powder, salt, and black pepper).Bake: Place the pork into a deep 9x13 baking dish or a Dutch oven. Add 1/2 cup of apple cider vinegar & 1/2 cup water to the bottom of the pan to keep the meat moist.Cover Tightly: Seal the baking dish tightly with heavy-duty aluminum foil or a secure lid so the steam stays trapped inside.Cook: Bake for 2.5 to 3 hours. The pork is ready when it is completely tender and reaches an internal temperature of at least 190°F to 205°F on an instant-read meat thermometer.
Shred: Remove the pork from the oven and let it rest for 15 minutes. Place the warm meat on a cutting board or shallow bowl and use two forks to shred the meat against the grain.Mix with Sauce: Drain excess grease from the baking pan, place the shredded meat back into the dish, and mix it directly with 1 to 2 cups of your favorite BBQ sauce. Add 1/2 cup cooking broth too
