Ingredients
8 servings
5 lbspork shoulder steaks
bone-in, about 1/2 inch thick
cajun seasoning
to taste
2 cupsall-purpose flour
½ cupvegetable oil
3yellow onions
medium, small dice
2green bell peppers
small dice
3celery stalks
small dice
¼ cupgarlic
minced
2dried bay leaves
1 cupbeer
pilsner or ale
2 quartslow-sodium chicken stock
you'll likely use less
2 Tbspworcestershire sauce
tabasco
to taste
rice
hot, cooked, to serve
Instructions
Season and flour:
Step 1
Pat the pork steaks dry, season generously with Cajun seasoning, then dredge in flour until fully coated.
Brown on the stove:
Step 2
Heat the oil in a large skillet or Dutch oven over medium-high heat. Fry the steaks in batches until you get a good brown crust on both sides. Don't skip this — it's where a lot of the flavor comes from. Set the browned steaks aside.
Build the base on the stove:

In the same pot, add the onion, bell pepper, and celery. Scrape the bottom to loosen the browned bits and cook, stirring occasionally, for 10–15 minutes until dark brown. Add the garlic, bay leaves, and about 4 teaspoons of Cajun seasoning, cook 1 minute, then deglaze with the beer, scraping up any remaining bits.
Transfer to the slow cooker:

Move the vegetable mixture into the slow cooker. Add the browned pork steaks, chicken stock (start with about 4–5 cups instead of the full 2 quarts — a slow cooker doesn't reduce liquid the way an open pot does), and Worcestershire
Cook low and slow:

Cover and cook on LOW for 6–8 hours, or HIGH for 3–4 hours, until the pork is falling-off-the-bone tender.
Thicken the gravy:

Slow cookers trap moisture, so the gravy usually won't reduce to the thick, almost-gumbo consistency you'd get on the stovetop. About 30 minutes before serving, remove the lid and let it cook on HIGH uncovered to reduce, or stir in a slurry of 2 tbsp flour or cornstarch mixed with a little cold water to thicken it up.
Season and serve:
Step 7
Adjust with extra Cajun seasoning and Tabasco to taste, then serve over hot rice.
