Cilantro Lime Chicken

Juicy cilantro lime chicken made with a simple marinade! Grill or cook in a skillet for the perfect chicken for tacos, bowls, or meal prep. Marinate at least 30 minutes is recommended, but 2-8 hours will give the best flavor.

Instructions

Make the Marinade:

In a bowl, whisk together the avacado oil, Lime juice + zest, garlic, spices, honey (if using). Stir in chopped cilantro last. Reserve a small amount (a few tablespoons) of the marinade in a separate container to spoon over the cooked chicken before serving. You can refrigerate the reserved marinade to use later on.

Marinate the Chicken:

Pat chicken dry and season lightly with salt and pepper.

Add the chicken to a bowl or bag and coat with the remaining marinade. Marinate for a minimum of 30 minutes, and up to overnight. The ideal amount of time is between 2-8 hours.

Grill Method:

Preheat your grill to medium-high (400°F). Oil the grates and grill the chicken 5-6 minutes per side if using thighs, and 4-5 minutes per side for breasts, to reach an internal temperature of 165°F.

Skillet Method:

Heat 1–2 tablespoons of oil in a large skillet over medium-high. Add the chicken and cook 5–6 min per side for thighs and 4–5 min per side for breasts.

Re-mix the reserved marinade you saved earlier and spoon over the cooked chicken for extra fresh flavor.
