A mild, satvic-style sambar made with soaked arhar dal, tender pumpkin and beans, and a homemade roasted sambar masala, finished with tamarind pulp, rock salt, and coriander.

Instructions

Step 1
Soak the arhar dal in plenty of water for 6 hours. Soak the tamarind in 1/4 cup water for 1 hour.
Step 2
Drain the dal and place it in a saucepan with 1 cup fresh water. Bring to a boil, reduce to medium heat, partially cover, and cook for about 20 minutes until soft. Cool slightly.
Step 3
In another pot, dry roast the mustard seeds and curry leaves for about 1 minute.
Step 4
Add the pumpkin, carrot, green beans (or drumstick), turmeric, and water. Cover and cook for about 15 minutes until the vegetables are tender.
Step 5
Squeeze the soaked tamarind well and strain it through a sieve. Discard the fibres and keep the smooth pulp.
Step 6
Dry roast all the sambar masala ingredients for about 3 minutes until aromatic. Cool slightly, then grind to a fine powder.
Step 7
Add the cooked dal with its cooking liquid to the blender and blend with the roasted spices until smooth.
Step 8
Pour the blended dal mixture into the vegetable pot. Add the tamarind pulp, extra water if needed, hing, and nutmeg. Stir well.
Step 9
Cover and simmer for 5 minutes so the flavours combine.
Step 10
Turn off the heat. Stir in the rock salt, garnish with chopped coriander, and serve hot with idli, dosa, or rice.
