Oven-Baked Sausages with Potato & Carrot Mash and Warm Green Bean & Onion Salad

Step 1
Preheat the oven to 200°C. Peel the carrots and potatoes and cut them into small pieces. Boil them in water seasoned with the chicken stock concentrate for 20–25 minutes, until tender. Drain the water, add the butter, and mash until smooth with a fork. Season with salt and pepper.
Step 2
Place the fresh sausages on a baking tray lined with parchment paper and bake in the oven for about 10 minutes, or until fully cooked and nicely browned.
Step 3
Peel the onions. Trim the tough ends and cut the onions in half.
Step 4
Heat oil in a frying pan over medium heat. Cook the onions until they begin to soften. Add the balsamic vinegar, 2 tsp sugar, and season with salt and pepper. Continue cooking until the vinegar coats the onions and they become glossy.
Step 5
Remove the onions from the pan and add the green beans to the same pan. Season with salt and cook over medium heat for 1–2 minutes, until the beans begin to soften but still remain crisp. Return the onions to the pan and toss everything together.
Step 6
Serve the oven-baked sausages with the potato and carrot mash and the warm green bean and onion salad. Enjoy!
