Instructions
Step 1

Cook noodles in salted boiling water until al dente according to package instructions. Reserve noodle cooking water before draining because the starch helps create a smooth sauce.
Step 2

Melt butter in a skillet over medium heat. Add sliced garlic and cook until pale golden and fragrant while avoiding high heat that can burn the garlic.
Step 3

Add oyster sauce, soy sauce, brown sugar, sesame oil, and optional turmeric. Stir over low heat until the sugar dissolves and the sauce becomes fragrant.

Add chopped scallions and cook briefly until softened while keeping their fresh aroma.

Reduce heat and add cooked noodles, Parmesan cheese, and reserved noodle water. Toss until the butter, cheese, and cooking water create a glossy sauce coating every noodle strand.
