Ingredients

30gbutter
1onion
medium, finely chopped
Garlic
to taste, finely chopped
1.2 litresvegetable stock
2 x 400gtinned tomatoes
1bouquet garni
made of parsley, thyme, a bay leaf and a strip of lemon rind
6black peppercorns
150mldry sherry
1 tablespoonarrowroot
slaked with 2 tablespoons water
lemon juice
salt
to taste
125mlsingle cream
1 tablespoonchives
snipped or parsley, chopped
Instructions
Step 1
Sweat the onions in the butter until translucent over low heat. It will take quite a while, but don't rush it, as you don't want excessive browning.
Step 2
Add the tomatoes, vegetable stock, sherry, peppercorns, and bouquet garni and bring to a boil.
Step 3
Lower the heat and simmer for 20 minutes.
Step 4
Stir in the arrowroot slurry and raise the heat to bring back to a boil for a brief moment to activate the starch in the arrowroot.
Step 5
Remove from the heat, strain, and season with lemon juice, as desired.
Step 6
Garnish with herbs and cream, as desired.
