Crispy Roasted Potatoes with Hot Rosemary Honey (gf) (v)

Crunchy, golden roast potatoes with fluffy centres, finished with a warm drizzle of rosemary, garlic and chilli honey for a sweet, spicy kick. Perfect for sharing.

Instructions

Step 1
Preheat the oven to 210°C fan bake.
Step 2
Cut the potatoes into large chunks and cook in a pot of salted boiling water until three-quarters cooked with only a little resistance in the middle.
Step 3
Drain the potatoes well and put back in the pot over a low heat. Shake the pan to roughen up the outside of the potatoes while driving off excess moisture. Don’t skip this step.
Step 4
Put the oil in a large roasting dish and heat in the oven for 5 minutes or until very hot.
Step 5
Very carefully tip in the potatoes and spread to a single layer. Season well with salt and pepper.
Step 6
Roast for about 40 minutes, turning occasionally until the potatoes are super crisp and golden on all sides.
Step 7
Drizzle: Put the honey and rosemary in a small pot and slowly heat until it’s bubbling. Add the garlic and chilli flakes and cook for 30 seconds.
Step 8
To serve: Put the potatoes in a warm serving bowl and drizzle over the hot honey. Season with salt and serve immediately.
