Avocado Bread

Instead of avocado toast, what about avocado bread? Imagine banana bread, but avocado instead. The avocado provides healthy fats and protein without the need for butter or oil. It's sweetened with granulated monk fruit instead of white sugar to keep it sugar free and lower in carbs. And using whole wheat flour instead of refined white flour means more fiber, vitamins, and minerals. This healthy quick bread is a great snack on its own, warm or cold, but is especially good when topped with jam or nut butter. Or double up on the avocado toast with some guac or sliced avocado!

Mash your avocado with the back of a fork in a large bowl. Combine together with the granulated monk fruit, egg, vanilla, salt, baking powder, and whole wheat flour. Mix until just fully combined with a silicone spatula.
