FLYING DUTCHMAN BURGERS
450gbeef burger patties
3onions
large
8slices American-style cheese
salt

Black pepper

All-purpose seasoning

CARAMELISED ONIONS

Instructions
MAKE THE BURGER SAUCE
Step 1

Add the mayonnaise, ketchup, mustard, white vinegar, sugar and finely chopped gherkins to a bowl. Season with salt and black pepper, then mix until smooth and creamy. Pop it aside while you prepare everything else.
PREPARE THE FRIES
Step 2

Peel the potatoes and slice them into thin fries. Rinse off the excess starch and pat them completely dry before frying.
PREPARE THE ONIONS
Step 3

Cut several thick rounds from the large onions, keeping the rings together — these will replace the burger buns. Finely dice the remaining onion for the animal-style fries.
CARAMELISE DICED ONIONS
Step 4

Melt the butter in a frying pan over medium heat. Add the diced onions and light brown sugar and cook slowly, stirring regularly, until soft, golden and caramelised. Remove and set aside.
COOK THE ONION ‘BUNS’
Step 5

Add the thick onion rounds to a lightly buttered pan and cook over medium heat until beautifully golden and caramelised on both sides while still holding their shape. Set aside.
PREPARE THE BEEF BURGERS
Step 6
Split each standard beef burger patty into two portions and flatten them into thinner patties. Season generously with salt, pepper and all-purpose seasoning
COOK THE BURGERS
Step 7

Heat a frying pan over medium-high heat and cook the patties on both sides until browned, caramelised and completely cooked through. Remove them from the pan temporarily.
FRY THE CHIPS
Step 8

While the burgers are cooking, heat your frying oil and cook the homemade fries until crisp and golden. Drain well and season with salt.
BUILD THE FLYING DUTCHMAN
Step 9

Return an onion round to the pan and add a little cheese on top to help everything stick together.
Step 10

Layer: Onion → cheese → burger → cheese → burger → cheese → onion
Step 11

Cover the pan with a lid for a minute or two, allowing the residual heat and steam to melt all that cheese together.
MAKE ANIMAL STYLE FRIES
Step 12

Pile the hot fries onto your serving plate, add the American cheese while they’re still piping hot so it begins to melt, drizzle generously with the homemade sauce and finish with the caramelised diced onions.
SERVE
Step 13

Serve the Flying Dutchman burgers immediately alongside the loaded animal-style fries, extra sauce for dipping and some baby hot peppers if you can find them.
