Ingredients

Caribbean Citrus Marinade
¼ cupFrozen OJ Concentrate
thawed
1 Tbspworcestershire sauce
1 tspSodium Free Beef Bouillon
1 tspCaribbean Citrus seasoning mix
I use
½ tspdried marjoram
substituted for oregano per protocol
1 Tbspbrown sugar
optional: reduce to 1 tsp for a tangier profile
1clove garlic
minced
Instructions
Step 1
Whisk: Place marinade ingredients in glass bowl and mix thoroughly.
Step 2
Freeze: Place chops and marinade in freezer container/bag, remove as much air as possible, then seal.
Step 3
Thaw: Place in refrigerator overnight to thaw and marinade (preferred), or in cold water bath (up to an hour to thaw).
1/2" Thick Chops - Thin Chops
Step 4
Bake: Preheat to 350°; Bake tightly covered for 8-10 minutes. Continue Below
3/4" Thick Chop - Standard Chop
Step 5
Bake: Preheat to 350°; bake tightly covered for 14-16 minutes. Continue Below.
1" Thick Chop - Thick Chop
Step 6
Bake: Preheat to 350°; Bake tightly covered 18-20 minutes. Continue Below.
Continue
Step 7
Bake: Uncover and bake an additional 5-7 minutes
Step 8
Rest: Remove from oven, flip chop, and rest for 5 minutes before serving.
