Slow Cooker Beef Brisket with BBQ Sauce

Beef brisket is rubbed with a simple spice mix, slow-cooked until tender in homemade BBQ sauce, then roasted to caramelise. Slice thinly and serve with extra sauce.

Ingredients

1.5kgbeef brisket
1 Tbspolive oil
or neutral oil like vegetable/canola
Rub
1 Tbspbrown sugar
2 tsppaprika powder
1 tsponion powder
1 tspgarlic powder
½ tspcumin powder
¾ tspmustard powder
1 tspsalt
½ tspblack pepper
BBQ Sauce
2garlic cloves
minced
125mlapple cider vinegar
375mlketchup
½ cupbrown sugar
packed
2 tspblack pepper
2 tsponion powder
2 tspmustard powder
2 tsponion powder
2 tspmustard powder
1 tspcayenne pepper
adjust to taste
1 Tbspworcestershire sauce
Instructions
Step 1
Mix Rub ingredients. Rub all over brisket. If time permits, leave for 30 minutes – 24 hours in the fridge (optional).
Step 2
Combine BBQ Sauce ingredients in a slow cooker. Mix then add the brisket – squish it in if needed.
Step 3
Slow cook on LOW for 8 hours (1.5 kg / 3 lb) to 10 hours (2 kg / 4 lb).
Step 4
Remove brisket onto a tray.
Step 5
Pour liquid in slow cooker into a saucepan. Bring to a simmer over medium-high heat and reduce until it thickens to a syrup consistency (it thickens more as it cools).
Step 6
Meanwhile, drizzle brisket with oil then roast in a 200°C/390°F oven for 15 minutes until brown spots appear. Remove then baste generously with sauce, return to oven for 5 minutes. Remove and baste again, then return to oven for 5–10 minutes until it caramelises and looks like the photos.
Step 7
To serve: Slice brisket thinly across the grain and serve with remaining BBQ sauce.
