Instructions
Step 1
Preheat oven to 180 deg (fan) Warning, this recipe is very much upto you and quantities can be as much or as little as you like. The servings quantity is based on 1 400g tin of coconut milk. Be creative!

Wash Rice & leave to drain
Step 3
Chop chicken into 1inch cubes and spread in a dish
Step 4
Cut vegetables into small pieces. Spread evenly on top of chicken.

Spread drained rice over top

Mix in a separate bowl the spice mix, yoghurt , coconut milk and some water, gently stir in the oil. Tip: the spice mix can be swapped for a curry paste eg, Tikka Masala, just reduce the water

Pour liquid mixture over top of chicken and vegetables. Add more water if necesary

Loosly cover dish with tinfoil if you don't want crispy rice at the top, but not too tight , because you want to let the steam out. Tip recommend rectangular pie dish about two inches deep.
Step 9
Bake in oven for about 1hr or until cooked through and all the liquid has absorbed. ( recommend stir halfway through, also if drying out too quick you can add more water.) Optional you can serve with chopped coriander. Note you can swap out or in any vegetables you like. Be mindful that if you take out the chicken, you may need additional water as the vegetables may get too dry.
