Chicken Malai Tikka
Creamy chicken tikka marinated with yogurt, cream cheese, and malai, spiced with turmeric and garam masala, then baked or grilled until tender and lightly charred.

500gboneless chicken
cut into tikka-size pieces
½ cupthick yogurt
1 ½ Tbspginger-garlic paste
2 Tbspcream cheese
3 Tbspheavy cream
1 Tbspoil
¼ tspturmeric
1 tspcoriander powder
½ tspcumin powder
½ tspgaram masala
¼ tspchilli powder
1 tspkasuri methi
crushed
1 Tbsplemon juice
salt
to taste

Instructions
Step 1
Add chicken and all the marinade ingredients to a bowl. Mix very well and coat the chicken evenly.
Step 2
Cover and marinate for at least 2–4 hours, preferably overnight.
Step 3
Thread the chicken onto skewers. Place on a lined baking tray or grill.
Step 4
Bake: Cook at 425°F (220°C) for about 18–22 minutes, turning halfway, until cooked through and lightly golden. Grill: Grill until cooked through and nicely charred.
Step 5
For a restaurant-style charred finish, brush the cooked tikka generously with melted butter and place it directly on a hot skillet/grill pan for 30–60 seconds per side until slightly charred.
Step 6
Finish with a squeeze of lemon and a sprinkle of crushed kasuri methi.
