Rosemary Sweet Potatoes

Vic has been making these delicious roasted rosemary sweet potatoes a lot lately, to the point where I knew I needed to take a crack at it. They're soft, savory, sweet, and simple. My secret is to start the sweet potatoes in the microwave, helping them stay moist and tender without drying out, while also cutting back on the roasting time.

Instructions
Step 1
Preheat your oven to 400F, and line a large cookie sheet with parchment paper.
Step 2
Wash your sweet potatoes, and cut into a medium dice. Add to a large glass bowl, cover with a plate, and microwave for 5 minutes.
Step 3
Add the steamed sweet potatoes to the pan, and season with rosemary, garlic, onion, salt, and pepper.
Step 4

Roast at 400F for about 30 minutes, or until tender and browned.
