Vic has been making these delicious roasted rosemary sweet potatoes a lot lately, to the point where I knew I needed to take a crack at it. They're soft, savory, sweet, and simple. My secret is to start the sweet potatoes in the microwave, helping them stay moist and tender without drying out, while also cutting back on the roasting time.
