Instructions

Step 1
Put the 32 frozen meatballs in your crockpot

Dice 1 medium onion and add it over the meatballs.

In a bowl, combine: 1 can cream of chicken 4 cups chicken stock 1 cup heavy cream ½ cup sun-dried tomatoes 2 tsp Italian seasoning 1 tsp garlic powder ½ tsp salt ½ tsp black pepper red pepper flakes, if using

Step 4
Pour everything over the meatballs and onion. Give it a gentle stir.
Step 5
Cover and cook on LOW for about 3.5-4hours. You don't need to keep stirring it.
Step 6
When the meatballs are hot and you're about 30 minutes from eating, add the entire 16-oz package of gnocchi and 2–3 cups spinach. Stir them into the sauce.

Step 7
Turn the crockpot to HIGH, cover, and cook another 20–30 minutes, until the gnocchi is soft all the way through and everything is piping hot.
Step 8
Stir well and taste. If the chicken-stock flavor is too strong, add a little Parmesan, an extra splash of heavy cream, and/or a pinch more Italian seasoning and salt. Give it another few minutes on HIGH.
