Add the cottage cheese, eggs, almond flour, monk fruit, baking powder, vanilla, cinnamon, and salt to a blender. Blend until smooth.

Let it sit for 2–3 minutes. This helps the almond flour absorb some of the moisture.

Heat the pan

Lightly grease a nonstick skillet with the oil. Heat over medium-low.

Cook the pancakes

Pour about 2 tablespoons of batter per pancake into the pan. Cook for about 2–3 minutes, until the edges look set and bubbles begin forming.
