Instructions

1. Preheat oven to 400°F.

2. Place potatoes in a large pot and cover with water. Add a little salt. Bring to a boil and cook for 15–18 minutes, until very tender.

3. While the potatoes cook, heat olive oil in a large skillet over medium heat.

4. Add the ground beef and cook until completely browned, breaking it apart as it cooks. Drain excess grease if needed.

5. Add the carrots and green beans. Cook for about 5 minutes.

6. Stir in the tomato paste, thyme, turmeric, salt, and black pepper.

7. Pour in the beef broth. Simmer uncovered for 8–10 minutes, until the vegetables are tender and the mixture has thickened.

8. Drain the potatoes well. Add the milk, butter, salt, and pepper. Mash until smooth.

9. Transfer the beef mixture to a baking dish.

10. Spread the mashed potatoes evenly over the beef mixture.

11. Run a fork across the top of the potatoes to create ridges.

12. Bake uncovered for 20–25 minutes, until hot and lightly golden on top.

13. Let stand for 5–10 minutes before serving
