Crunchy Homemade Granola

Crunchy homemade granola with oats, nuts, coconut, maple syrup or honey, and cinnamon. Bake until golden, cool fully for clusters, then mix in dried fruit.

Ingredients
8 servings
3 cupsold-fashioned rolled oats
1 cuppecans
chopped, or almonds
½ cupunsweetened shredded coconut
⅓ cupmaple syrup
or honey
⅓ cupavocado oil
melted coconut oil, or melted butter
1 teaspoonvanilla extract
1 teaspoonground cinnamon
½ teaspoonsalt
½ cupdried cranberries
raisins, or chopped dried cherries
1egg white
Optional for extra-large clusters, lightly beaten
Instructions
Step 1
Preheat oven to 325°F.
Step 2
Line a large baking sheet with parchment paper.
Step 3
In a large bowl, combine oats, nuts, coconut, cinnamon, and salt.
Step 4
In a small bowl, stir together maple syrup or honey, oil, and vanilla.
Step 5
Pour the wet mixture over the oats and stir until everything is evenly coated.
Step 6
If using the egg white, stir it into the granola mixture now.
Step 7
Spread granola evenly onto the prepared baking sheet. Press it firmly into an even layer with a spatula.
Step 8
Bake for 20 minutes.
Step 9
Rotate the pan and bake another 10–15 minutes, until lightly golden.
Step 10
Remove from the oven and do not stir.
Step 11
Let cool completely on the baking sheet approx 45 mins.
Step 12
Break into clusters and stir in the dried fruit.
