1 cuppurple cabbage
thinly shredded
1mango
ripe, peeled and diced
2blood oranges
peeled and segmented
1 cupshelled edamame
cooked and cooled
1avocado
sliced
0.5cucumber
thinly sliced
1watermelon radish
small, thinly sliced
2 Tbspfresh mint leaves
2 Tbsppumpkin seeds
Lime-Ginger Dressing
Instructions
Make the dressing
Step 1
In a small bowl or jar, whisk together the olive oil, lime juice, orange juice, maple syrup, grated ginger, Dijon mustard, sea salt, and black pepper until smooth.
Assemble the salad
Step 2
Add the mixed greens and purple cabbage to a large serving bowl or platter.
Step 3
Arrange the mango, blood orange segments, edamame, cucumber, and watermelon radish over the greens.
Step 4
Add the avocado slices on top.
Step 5
Scatter the mint leaves and pumpkin seeds over the salad.
Step 6
Drizzle with the lime-ginger dressing just before serving.
Step 7
Serve immediately.
