Perfect Pancakes

Instructions

Step 1
Double or triple the recipe to freeze
Step 2
In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well (or volcano, as my son calls it) in the middle, and pour in the milk, egg, and melted butter, if using; mix with a fork or whisk until smooth.
Step 3
Heat a griddle or large pan over medium-high heat (I set my griddle at 375°F [190°C]).
Step 4
Pour or scoop ¼ cup (125 g) of batter for each pancake. Wait until bubbles form on the top to flip. Brown on the other side and serve with butter and maple syrup.
