Instructions

Step 1
Line and grease a square cake pan

Peel potatoes. Cut into pieces and par boil in the microwave. Strain and set aside.

Fry pancetta pieces in a pan until cooked and little crispy. Set aside.

Cut up leek and fry in a pan with butter. Add in some salt to taste.

Cut up celery.

Cut 110g of the swiss cheese into cubes. Slice or grate the rest to put on top later.

Whisk eggs and mix in cream. This mixture needs to cover all of the fillings in the pan. (Add another egg and some cream if it isn't enough)

Layer potatoes, cubed cheese, pancetta, leek and celery. Pour in the egg mix. Put the slices swiss cheese on top. (Parmesan is also nice for some flavour with the swiss)

Cooked in over at 180°C for 50 minutes or until cooked through and golden brown.
Step 10
Serve hot or cold. Makes 6-8 pieces. I frozen some for easy lunches and dinners.
