Instructions

Step 1
Grate carrots on the fine side of a box grater and squeeze out excess moisture in a clean kitchen towel — this is critical to prevent soggy bites.
Step 2
In a large mixing bowl, combine peanut butter and honey and stir until smooth. Add grated carrots and vanilla and mix well to incorporate.
Step 3
Add rolled oats, whey protein powder, ground cardamom, cinnamon, nutmeg, and salt. Fold everything together until a cohesive dough forms. If the mixture is too wet to roll, add a few more tablespoons of oats. If too dry, add a small drizzle of honey.
Step 4
Fold in goji berries. Cover the bowl and refrigerate the mixture for 30 minutes — this makes rolling much easier and helps the bites hold their shape.
Step 5
Once chilled, portion the mixture into 30 balls (5 per serving) using a tablespoon or small cookie scoop, rolling firmly between your palms. Each ball should be roughly 1.5 inches in diameter.
Step 6
Arrange on a parchment-lined sheet pan and refrigerate for at least 1 hour until firm. Store in an airtight container in the refrigerator for up to 10 days or freeze for up to 2 months. No day-of preparation required — eat straight from the fridge.
